Here’s a great meal that’s quick to throw together with 5 ingredients (unless you include salt, pepper, and water as ingredients–then it’s 8 ingredients!). I wish I could say that I won’t be using this recipe for awhile because we’re grilling from now until the snow flies this fall. BUT I live in ND, and yes, it has snowed in the last 48 hrs. It’s also been 81 degrees at some point this month. Boy does ND weather sure keep us on our toes! Snow in April and May is not as much a surprise in ND as NO snow in April and/or May. Thus, my oven must still be operating daily, and we must stare at our grill longingly, awaiting the days of grilling. Summer is calling my name…Until then here’s a comfort dish perfect for Sunday dinners or those days you wake up to snow!
This is a recipe we often enjoy as a Sunday dinner after church. It takes awhile to bake, which is why we often use this one on Sunday mornings! I throw it together, set the oven timer, and leave for church. After nearly 2 hours we come home to the house smelling good and a hot meal ready for us to eat. Yum!
With tummies full, naps follow shortly. Ahhh Sunday naps. It’s the one day in the week that I might, JUST MIGHT, get a nap in.

Chicken-n-Rice (Click for printable recipe card)
|4-6 boneless chicken breasts|
|1 ½-2 cups white rice, uncooked|
|1 envelope Lipton Onion soup mix|
|1 can cream of mushroom soup|
|1 can cream of chicken soup|
|1 ½ cans water|
Leave chicken as whole breasts or cut into pieces. My kids like when I cut into smaller pieces.
Grease a 9×13 pan. Pour rice evenly in pan.
Combine chicken, mushroom, and onion soup mixes along with the water.
Oops don’t forget the pepper (salt may be added later since the condensed soups can be pretty salty already).
Pour the soup mixture over the rice and STIR.
Then place chicken breasts (or pieces) on top.
Cover with foil and bake for 1 1/2 to 1 3/4 hour on 375 degrees. IF POSSIBLE, stir half way.
